Modular to reduce dependecy load

Hi!

I really wish this would be a modular package.
I'd like to use the zod validator but it seems I get a lot of other dependencies that I then have to evaluate if I just want to use the validator.

Most of the dependencies are set as optional peer dependencies so you can only install the ones you need when you need it and the other ones will not be installed.

By default, you only get these dependencies (we may reduce it with time but depends on the lib):

• ajv, ajv-formats, ajv-keywords are needed for now as it was the validator before adding Zod recently. Given that zod has proven better, we may remove it at some point
• bson is quite small and is required to add support to ObjectId transforms throughout the package.
• date-fns is needed for similar reason, to support some Date transforms from JSON
• pino and pino-pretty is used as the basic logger, maybe it could be move to its own export and set as optional peer dependency too 🤔
• es-toolkit is quite useful and will probably be shared with other deps
• zod is a peer dependency but isn't optional, but in your case I guess that not the problem 😅

The package could be made into smaller modular packages but it would add some complexity that I don't think is necessary right now (as long as optional dependencies are still optional and not installed). I'll keep in mind the idea though, with maybe a core module and create modules per mixins
