Documentation builds fail

See, for example, https://github.com/trixi-framework/Trixi.jl/actions/runs/17774331189/job/50518098404. The reason is that UnitfulLatexify.jl is still used as a dependency somewhere, but has also been added as an extension to Unitful.jl in the latest release. To make our docs work again, we have to

• either restrict something artificially ourselves
• ping upstream developers to remove their dependency on UnitfulLatexify.jl
