Privliged vs Unprivliged

I understand the user host mapping at root (0) when it comes to Privileged containers but aside from a privileged LXC for Plex and GPU transcoding my only other option would be through a VM which isnt' something I wanna do. I've read all over that privliged lxc's are a security risk and this and that but in laymens terms, how bad are the issues revolving security? If I was just using Plex on an unprivliged LXC what is worst case scenario?
