Ai Assistant model can not be set

https://github.com/twilio/twilio-oai/blob/main/spec/json/twilio_assistants_v1.json#L353 the oai states that you can not set the model when creating the ai assistant. That however is possible please add it so that it's possible to use the SDKs.
