Update Globus docs with "UAB RCS Cheaha HPC" collection

What is inaccurate?

The Globus docs currently references the Cheaha cluster off-campus (UAB Science DMZ) and Cheaha cluster on-campus (UAB Science DMZ) endpoints/collections in several sections.

• Update all references and screenshots to use the new endpoint name (UAB RCS Cheaha HPC).
