Please add ideas and comments below. The emphasis should be on ensuring that participants leave the course with some a physical output of some kind, practical skills, enthusiasm for the subject, and a good idea of where to go next.

Ideas discussed so far

mapping
replicating a paper
some form of data visualisation
pick something controversial
produce one compelling infographic by the end of the day
[new] not being intimidated by programming, data, etc. Getting familiar with the common tools and knowing where to look when you get stuck.
