In Slack you can exit a code block or quote block by Enter in a new line, and then enter again to exit the block.

Is it possible to implement this in a plate editor? With the ExitBreak or ResetNodePlugin?

Using the exit break plugin, it should be possible. You can customize the conditions using query option.
