Enable debug logs when running e2e tests in CI

Since we use GH runners and accessing them is not that straightforward, we need to obtain as much info as possible when a test fails. A way to do that is enabling debug logs in `urunc`. We can then obtain the logs from syslog, or from the container's log file.
