Is it possible to remove or filter paths in remap or filter transform?

The idea is to remove all path-value pairs that match (or not match) the pattern.
So, I need to filter the keys, not the values.

Something like:
del(., r'service') (remove key-value pairs if key doesn't contain service string)

or

transforms:
  my_transform_id:
    type: filter
    inputs:
      - my-source-or-transform-id
    condition: . ~= REGEXP_PATTERN

Yes it is! VRL is really powerful and you can do a lot of stuff with it. You are probably looking for the keys and remove functions - del won't work here. See this playground link, it will give you a great starting point.
