More Wayland recording formats

Please allow us to switch video formats instead of needing to add extra time consuming steps to convert the mkv video manually afterwards.

Let it be locked behind a setting if corrupting the file is so common

I understand your thought of using "only mkv for security", but that is not a reason to disable all other formats for people who do want to take the convenience and risk of using the other formats. Having an option "TAKE THE RISK" to enable the formats would be nice

I hope x264 could be supported in wayland. Because I find x264 is better than H264.
