[Feat] Access log of router should support gateway API and it's inference extension as well #617

What would you like to be added:
Access log of Kthena Router should include information about Gataway API and Gateway API inference extension if necessary.
Why is this needed:
Now it only include ModelRoute/ModelServer related information which is not enough.
