Simplify bindings, make it a setting inside wayvr

The only reasonable way I could see this be accomplished is integration of an OpenXR API layer to support remapping inside of a system-installed, package managed, wayvr client. Could use the API layer to tweak any other client input.

We do already have an existing rebinding layer for OpenXR directly but it's a bit obtuse for end users.
The OpenVR direct integration of the bindings json override with the env var is easier though.

it could be even simpler. It could be a simple menu inside the overlay's settings, where you change the settings then it asks you to restart your VR stuff
