chore: Remove unused docker and deploy files

- Remove old docker-compose files (using docker-compose.dev.yml)
- Remove SSL-related nginx configs (not using SSL)
- Remove admin nginx config (admin deployed on Vercel)
- Keep setup.sh, deploy.sh for EC2 setup
- Keep AWS scripts for future SQS/S3 setup
