Add support for server side tracking #1
Description
As a fallback / configuration option it would be ideal to add support for tracking visits server-side. In addition to this the plugin should also include the recommended PHP dependencies for pulling data from Matomo and sending data to Matomo. Ideally it can also provide some helpers to make it easy to send custom analytics data to Matomo.
This could be handled by a middleware that plugins could also add to their routes if desired or it could be handled by a component that gets dropped on the page to enable or the current tracker component could handle it.
