Refactor WDODocumentType and DocumentSubmitFileType to reflect new API #50

Task specification
getConfiguration API returns document type of String.
In order to simplify document configuration for our customers, with @kober32 we decided to remove
WDODocumentType, DocumentSubmitFileType and replace it with typealias String.
We will still accept existing documents (ID card, passport, drivers license), but rather as string values so any further updates are easy to do (by adding localizations)
