Transpose to correct dimension order

Currently, the order of the dimensions of the regridded datasets/dataarrays is not consistent or not clearly defined.

Ideally, all regridding routines should return the dimensions in the following order:

- First the target dataset dimensions in the target dataset's order
- Then the remaining dimensions, in the original order
