Convert to monorepo

Clear and concise description of the problem

I'd like to convert this repo to a monorepo, so that it can hose Bedstack stripped, Bedstack start, and the docs, in an organized way.
This way it'll also be less moving pieces to maintain.

Suggested solution

Monorepo using Turborepo.

Alternative

Nx, Moonrepo, etc. but it'll take time for me to learn their quirks whereas I use Turborepo at work and in ArkEnv already.
