Support Sonata Admin 5

Hello,

I am currently upgrading my application to Sonata Admin 5.
During this process I noticed that yokai/sonata-workflow is not yet compatible with Sonata Admin 5.

Environment
• Symfony: 7.4
• PHP: 8.3
• Sonata Admin: ^5.0

Expected outcome
• Update dependencies to allow usage with Sonata Admin 5
• Adapt the codebase where necessary to ensure compatibility with the new Sonata Admin APIs

If you need help with testing or reviewing potential changes, I’d be happy to assist.

I just ran the test on latest Sonata + Symfony and fixed some things
