I don't have a ready solution, but can at least contribute where the problem lies.
The problem is that the API resource apiextensions.k8s.io/v1beta1 has been deprecated since Kubernetes v1.22 and replaced by apiextensions.k8s.io/v1. Your Kubernetes version is probably v1.22+ (details here).
However, it is not enough to adapt the apiVersion, but a bit more needs to be done here so that the CRD can be deployed again.

Wanted to try operator, but have only clusters v1.22 and newer

I created a pull request with that you can deploy the CustomResourceDefinition on Kubernetes 1.22+. It deploys for me and I guess it could be also a starting point for you, but be cautioned, the PR is not yet reviewed by the experts of yugabyte.
