[Feature Request] Expose matter PowerMeter/... via Prometheus metrics

I would like to start collecting the various power consumption values via prometheus to create a unified dahboard over different manufacturer of eg. matter-plugs.

Describe the solution you'd like
i would like to scrape the matterbridge-service (http-GET /metrics) using prometheus to store the values in a (eg. influx) database.

Describe alternatives you've considered
None

Additional context
The same applies eg. for temperature metrics, battery charge and basically all sensor data availabe, like humidity, co2, ...

Okay - Prometheus is a metric scraping tool that periodically scrapes typical metric endpoints and stores the values in an database (https://prometheus.io/docs/prometheus/latest/getting_started/)

This database can be utilized by Grafana (a dashboarding tool)
