revert(root): undo @clerk/express override

The @clerk/express 1.7.79 bump pulls @clerk/backend 2.x as a transitive,
which clashes with @clerk/backend@1.25.2 used directly by enterprise/packages/auth.
Type incompatibilities surface during the enterprise build (check-ee.mjs).
Reverting per Step 5 of the dependency bot guidance and moving to the next vuln.
