EoR-Spec Sims v2.1: Timestream simulation and data reduction

End-to-end simulation framework for FYST EoR-Spec, generating realistic detector-level timestreams including atmospheric emission, instrumental effects, and telescope scanning strategy. This release corresponds to the version used in the associated manuscript draft.
