What this PR does / why we need it:
OCP 4.18.34 has been defined as new default in CosmoDb with https://msazure.visualstudio.com/AzureRedHatOpenShift/_git/sdp-pipelines/pullrequest/14881416, but default version for E2E is not in CosmoDb and we need to define newer version that include fixes for CentralUsEUAP to allow E2E to run without issue in Canary without having to specify a manual version.
