Upgrade Nuxt Version

Changes:

• Removed unnecessary deps from Nuxt upgrade
• Replace all axios usage with fetch in the backend (Done but untested)
• Update nuxt configuration
• Update tsconfig and eslint as/if necessary
• Replace all this.$axios from frontend with fetch
• Update all SFCs script sections to script setup
