[test-optimization] [SDTEST-2400] Support happy-dom environment in Jest

What does this PR do?

This PR adds support for the happy-dom Jest environment by reusing existing implementations for other environments. It does so by extending JestEnvironment, ensuring consistency and minimizing duplication.

The first version to be supported is v10.0.0 as is the one that is able to run all features without giving us any error.

Motivation

One of our clients asked for support for this environment.
