Update python profiler docs

What does this PR do? What is the motivation?

• Simplified Caveats section given that Python 3.7 is EOL, and we don't support it officially.
• Removed mentions of Stack v2 as it's the only stack sampler since 4.x release.
• Added python version 3.0.0+ in the SSI support matrix. It used to be 2.11.1+, 49d45ed but we no longer support 2.x major release lines.
• Removed mentions of exception profiling as we stopped supporting it with stack v2 release.
