chore(deps): Remove pre-release dependency

Removes the pre-release requirement on the daq-config-server:- 1.0.0 was released earlier from the same commit as 1.0.0-rc2, and uv does not like dependencies with pre-release tags without being explicitly told they are allowed.

Therefore, this will cause issues in all projects that update to the copier template 5.0.0

Instructions to reviewer on how to test:

1. Confirm that tests still pass and uv sync can be used on projects

• If a new device has been added does it follow the standards
• If changing the API for a pre-existing device, ensure that any beamlines using this device have updated their Bluesky plans accordingly
• Have the connection tests for the relevant beamline(s) been run via dodal connect ${BEAMLINE}
