The README is very difficult to read. This is a first step towards improving it that runs `npx prettier --prose-wrap always --check "**/*.md" --write` and fixes code blocks

The README is very difficult to read. This is a first step towards improving it that runs
npx prettier --prose-wrap always --check "**/*.md" --writeto lint its formatting, fixes code blocks, fixes weird bullet numbering, and makes a couple of typo fixes. Otherwise, this does not change any content
