Fix the name and version number on readthedocs

Description

The version on readthedocs currently shows ESMValTool 0.1.something. This applies the same fix we already have for ESMValTool since ESMValGroup/ESMValTool#3815.

Run curl -s https://esmvaltool--2926.org.readthedocs.build/projects/ESMValCore/en/2926/quickstart/index.html | grep '<title>' to check that it works.
