chore: update dependencies

• Bump ESLint to latest major and use the latest version of our config
  • Lint / Format all files
• Bump Cypress to latest major
  • Changed mount() to a custom command for future updates
• Bump Vitest to latest major
  • Refactored few tests to delete mock-fs
• Bump pnpm to v10
• Update all the other dependencies except Vite (too much change that could fails the packages build)

Skipped the cli/templates since each teams needs to update them.
