feat: message composer

This PR includes:

• The addition of an AI Message composer
• A bottom sheet component for the composer related actions, with a detached state
• A MediaPickerService which picks either react-native-image-picker or expo-image-picker (depending on what's installed, undefined otherwise)
• Attachment support
• Sending messages support

Note: It does not (yet) include voice transcription as that's a larger change, it will come a bit later.
