chore: bump to v1.1.3 — fix CI release pipeline and rebuild DMGs

Triggers a full CI rebuild (test → release → publish_latest) so that:
- Both arm64 and x64 DMGs are built fresh and uploaded correctly
- The publish_latest job (now with the x64 pattern fix) updates the
  'latest' GitHub release tag with properly-named DMG files for the
  website's fallback download URLs
- The in-app updater's latest.json is refreshed with the new version

Changes in this release:
- Fix publish_latest workflow: Intel DMG was never uploaded (*x86_64* → *x64*)
- Create missing 'latest' release tag for stable website download URLs
- Add Gatekeeper 'app is damaged' workaround note on download page
- New Apple-style download landing page (web/) with bilingual DE/EN support,
  authentic macOS menu-bar popover mock, Umami analytics, real Impressum
