App icons support for Ollama, Proton Mail and sioyek

Description

Icon instances with appropriate SVG data for:

1. Ollama (sourced from official SVG icon data)
2. Proton Mail (sourced from Dashboard Icons)

Also added an icon map for the sioyek application to use the PDF icon.

Type of change

• New feature (non-breaking change which adds functionality)

How Has This Been Tested?

• Tested with local deploy of simple-bar widget while using aerospace as well as yabai.
• Tested in both light and dark modes (light/dark themes). Icons are visible and distinctive.

I'm not familiar with SVG encoding, but it seems like the SVG data for the Ollama icon is large because the icon is a bit complex and curvy. If you have any suggestions for cleaning this up to have the data wrap over multiple lines or <path> tags, please let me know.
