feat: add logs documentation and debug script

Description

This PR adds comprehensive logging documentation and debugging utilities to improve development and troubleshooting workflows.

Changes included:

• Updated logs/README.md with comprehensive logging information including log types, levels, and configuration
• Added logs/.gitkeep to maintain directory structure in version control
• Added docker/debug-logs.sh script for debugging purposes
