It is not worth the compute to test on so many combinations for a package without binary dependencies. Also, test macOS on AppleSilicon isntead of x86_64

It is not worth the compute to test on so many combinations for a package without binary dependencies. Also, test macOS on AppleSilicon isntead of x86_64. Also bump minimum Julia version to 1.6 as testing times out with version 1.0.
