ko: migrate kgo docs to ko

Description

After the release of KO there are still some leftover mentions of KGO in docs. This PR tries to migrated these to reference KO instead.

@Kong/docs-maintainers Can you please help with this one?

There seem to be a series of guides operator-get-started-kic (e.g. here and here) and I don't want to remove any links or scaffolding for that.

There's also the slug /operator/dataplanes/get-started/kic/create-gateway/ which I believe has to change now since KIC does not exist in the context of KO.

Any help will be much appreciated.
