BREAKING: MDX v2, Theme UI v0.15, Gatsby Head API

[LekoArts]

New major versions will be published for each theme to do the following upgrades:

• Use Gatsby's Head API and remove react-helmet
• Use MDX v2 and gatsby-plugin-mdx v4 (MDX v2 #989)
• Use Theme UI v0.15 or later (Theme UI v0.14 #968 + in this PR)
• Change React peerDep to 18 (Theme UI v0.14 #968)
• Improve SVG sprite usage (feat: Use SVG sprites #969)
