[PTHMINT-60] Rename the project folder in the workflows

This pull request updates references to the Python SDK directory across the codebase, renaming it from multisafepay-python to python-sdk. The changes ensure consistency in directory naming and update paths in workflow files for code quality checks and release processes.

Workflow Updates for Directory Renaming:

• .github/workflows/code-quality.yaml:

  • Updated the path for checking out the repository from multisafepay-python to python-sdk.
  • Modified submodule setup to reflect the new directory name.
  • Updated the path for the coverage report file to use python-sdk.

• .github/workflows/release.yml:

  • Updated the path for checking out the repository from multisafepay-python to python-sdk.
  • Adjusted submodule setup to reflect the directory renaming.
