Make it easier to sub-class SequentialBlock & ParallelBlock

Goals ⚽

Right now blocks like InputBlockV2 are implemented as functions and not as classes. This because, as of now, creating it in a sub-classes way adds extra overhead since get_config and from_config need to be implemented. This because it’s not possible to rely on the implementations of the super-class since the __init__ will get overwritted.

This PR changes SequentialBlock & ParallelBlock to make them more suitable for sub-classing. This will make it possible for users to decide their prefered way creating custom blocks.

Implementation Details 🚧

The get_config and from_config will work out of the box when sub-classes. This is done by relying on the __init__ of the base-class and then setting .__class__ to be the super-class.

This PR also includes moving InputBlockV2 and MLPBlock to the sub-class way. This made a test for the wide-and-deep model fail, so this PR also introduces a fix for that.
