You need to append organizationsEnabled to RealmRepresentation

@dlnilsson, I have append organizations as well. I just made a mistake in the commit message, I meant to write RealmRepresentation.

@WilfredDube , I had to fork your fork and so some additional changes to get the organization feature to work for my use-case, WilfredDube/gocloak@main...dlnilsson:gocloak:main you may want to cherry-pick some of these changes.
