runelite: 2.7.2 -> 2.7.5

Updated runelite to version 2.7.5 and added myself to maintainers .

To update from 2.7.2 it was necessary to switch from Maven to Gradle so I switched the derivation over to the new Gradle builder described in the nixpkgs docs.

This update was made based on information from https://github.com/runelite/launcher/releases/

This is my second time contributing and my first time doing a version bump that involves more than version and hash updates so any feedback and review is appreciated, it is building and running fine in my system but I'm sure more experienced reviewers will know if I missed something, constructive feedback is always welcome as I learn more Nix.

Considering that accounts migrated to Jagex Accounts can no longer use the standalone RuneLite client and soon all accounts will have to do so, I am no longer able to test this, so I have decided to close this PR. I am currently helping to maintain bolt-launcher package, which implements Jagex Launcher functionality on Linux. This is the modern alternative for running RuneLite.
