Due to the time component of the mock date, the number of days left for expiration was not consistently returning the correct days left due to timezone off sets. This resulted in some of the licensing tests failing randomly . Eg: https://github.com/Particular/ServicePulse/actions/runs/13488622751/job/37683212711?pr=2259#step:7:3254
This PR resets the time component to zero to remove time zone flakiness in tests
