Pull request overview
This PR adds automated GitHub release creation for mainnet Docker image builds. The workflow now generates a semantic version tag and creates a GitHub release with details about the mainnet Docker image whenever changes are pushed to the main branch.
Changes:
- Updated job permissions to allow writing to repository contents (needed for creating releases)
- Added a new step to create GitHub releases with version tagging and Docker image digest information
- Normalized quote style from single to double quotes for consistency

The Docker image tag in the release body is incorrect. It says "ratio1/dapp:mainnet" but should be "ratio1/explorer:mainnet" to match the actual image being built and pushed in line 79.
