Add all changed files in update-contributors

Important

Modify GitHub Action to include all changed files in update-contributors workflow.

• Behavior:
  • In .github/workflows/update-contributors.yml, the workflow now considers all changed files instead of just README.md when determining if changes exist.
  • Updates the PR body to indicate that all changed files are included in the update.
• Misc:
  • Removes add-paths specification for README.md in the create-pull-request step.
