Fix missing code coverage for Steeltoe.Management.Endpoint

Description

Coverlet crashes during instrumentation of the project Steeltoe.Management.Endpoint. Added a workaround for this bug.

Additional tweaks to correct coverage.
Fix Sonar build of the main branch.
