Unify deployment codes and AWS region mapping

Purpose of this pull request

This pull request updates the deployment regions documentation to unify deployment codes (AU, US1, US2, FED, etc.) with their corresponding AWS region names and API endpoints. The content now uses a single standardized table and consistent terminology, reducing confusion between UI labels, AWS region codes, and Sumo Logic deployment endpoints.

Select the type of change

• Minor Changes - Typos, formatting, slight revisions
• Update Content - Revisions, updating sections
• New Content - New features, sections, pages, tutorials
• Site and Tools - .clabot, version updates, maintenance, dependencies, new packages for the site (Docusaurus, Gatsby, React, etc.)

thank you! I was going to ask if anyone knew about that /docs/api/aws-region-by-sumo-deployment file. I dug into the history and it must've been created by mistake - just removed it.
