There's probably a reason we were using GCC, time to see why
- Cache Mac Qt install - Let it use the default aqt version
The action already adds the version/other options to the cache key, so we don't need to specify the prefix manually

Bump Qt version, clean up some action versions/options
Only downside I've encountered so far is that debug builds are slower (because MSVC seems to have heavier debug libraries) but this should only affect nightly builds and can probably be avoided with some flags
