Update onboaring status page to adhere to new vector branding colors

This pull request introduces a comprehensive visual refresh to the onboarding status web app, aligning it with the Vector Institute's branding. The changes focus on updating the color palette, typography, and UI components to use Vector's brand colors and styles, resulting in a more cohesive and modern user interface.

Branding and Theming Updates:

• Added Vector Institute brand color variables (e.g., --vector-magenta, --vector-cobalt, etc.) and gradients to globals.css for consistent theming across the app. Also updated card styles, border radii, and shadows for a more polished look.
• Switched the global font from Arial/Inter to Open Sans, and updated the layout to use this new font throughout the application. [1] [2]

UI Component Restyling:

• Enhanced the header with a Vector brand accent gradient and applied gradient text to the main title for a visually distinctive introduction.
