- Move all ros-z-* crates and rmw-zenoh-rs into a crates/ subdirectory to improve project organization and follow standard Rust workspace conventions.
- Updated all path references in Cargo.toml, documentation, CI workflows, pre-commit hooks, and mdbook configuration.

Update all ros-z-py paths to crates/ros-z-py to match the new workspace organization introduced in commit 845c3bc. This fixes Python test CI failures where the script was looking for ros-z-py at the root level instead of under crates/.
