Code Review
This pull request updates the vLLM dependency to version 0.11.0. The changes include updating pyproject.toml, adjusting a version check in vllm_patch.py, and removing the use_v1 configuration from various YAML files and test setups. While updating the dependency is correct, the removal of the use_v1 flag seems incomplete. The flag still exists in the core logic (trinity/common/config.py and trinity/common/models/vllm_model.py) with a default value of True, which means removing it from configuration files has no effect on behavior. To improve maintainability and avoid confusion, the use_v1 flag and its associated logic should be removed from the codebase entirely, assuming it's now obsolete with vLLM 0.11.
